This recipe has my son’s stamp of approval, which is a huge feat for soups. For this LOTRO Cook’s Recipe, I began with a recipe from Taste of Home called Golden Onion Soup. I made sure the recipe used a yellow onion and substituted pork stock for chicken broth. If you are making it yourself, make sure the cheese has been grated before you start. I needed to enlist the help of my teenager.

I cubed the butter and dropped it into my pan, then sliced the onion as thin as I could, quartered the slices, and added them to the pan as well. I measured my milk and pork stock into a bowl together to make them easier to add. I put the pan with butter and onions onto the stove and began heating it over medium heat.

Once the butter melted, I continued to cook and stir the onions and butter for about 5 minutes until the onions were tender. I then added the roasted garlic and herb seasoning and flour, mixing well. Next, I added the stock and milk mixture, continuing to stir it constantly. This was about the time I realized I wouldn’t be able to grate the cheese for myself, so I asked my son to help. I did taste test the soup as I went, and added ground black pepper, salt, garlic powder and onion powder in addition to the roasted garlic and herb seasoning I had used initially. Thirty minutes or so later, the soup had started to boil. I stirred and cooked it for 1 minute as directed, then reduced the heat and added the cheese.

As soon as the cheese was melted, I served it alongside freshly made barley bread. My son came back for seconds, which I took as a great compliment since he detests most soups.

Recipe: 1/2 c. butter (cubed), 2 c. thinly sliced yellow onion, 1/4 c. flour, 2 c. pork stock, 2 c. milk, 2 c. grated mozzarella cheese. I also used salt, black pepper, onion powder, garlic powder, and McCormick’s Grill Mates Roasted Garlic and Herb Seasoning to taste.
