Inspired by another of the LOTRO Cook’s Recipes from the apprentice tier, I set out to make a barley bread reminiscent of early breads. Finding a barley bread that did not use other flours was difficult. However, I did find one from Food Network that worked nicely. It created a slightly sweet, dense bread similar to cornbread. I borrowed the Dutch oven from my parents and served this with onion soup.

You will need 3 c. barley flour, 1 tsp. salt, 2 1/2 tsps. baking powder, 2 tbsp. honey, 1/4 c. canola oil, 2 eggs, 1 c. whole milk. I combined the dry ingredients in one bowl, and the wet ingredients in a second bowl. I paused to use excess oil to lightly grease the inside of the Dutch oven and to preheat my oven to 350 degrees Fahrenheit.

Then, I made a little well in my dry ingredients and poured in my wet ingredients. I mixed them together until thoroughly combined, then put the dough into the Dutch oven. I sprayed non-stick grease on my hand, and patted the dough down into the Dutch oven, covered it with the lid (apparently not recommended), and put it into my oven.

I let it cook for 30 minutes, then let it sit for 5 before turning it out onto a cooling rack. I sliced it into wedges to serve with soup.
