A recipe from the LOTRO cook’s apprentice recipes, Sandson’s famous hardboiled eggs call for yellow onions and chicken eggs. This is going to be an ongoing experiment to see if I can figure out what exactly is going on with the eggs.
Experiment #1: Make hard-boiled eggs as normal, with a slightly longer cook time and onion skins in the water. After researching online, I learned that boiling eggs with onion skins can infuse the eggs with the onion flavor. I took the onion skins from the three onions I used to make the pork stock, and I put them into a saucepan with three chicken eggs. I brought the water, onion skins, and eggs to a rolling boil over medium heat. I boiled them for 20 minutes (10 minutes longer than usual), then ran them under cold water, peeled them, and taste-tested one of the eggs. There was no discernable difference in flavor, but the previously white shelled eggs were three different shades of brown before peeling.
